Harvested by hand. 8 days of Skin contact with whole bunches and pressed. Spontaneous fermentation by indigenous yeasts. Fermented in a Fiberglass tank. Aged 11 months on lees in the tank. No Clarified, no stabilization, no filtrated, no sulfites added.
