Harvested by hand. Destemmed and crushed and about 5 days Skin contact. Spontaneous fermentation by indigenous yeasts. Aged 11 months on full lees in fiberglass and stainless steel tanks. No Clarified, no stabilization, no filtrated, no sulfites added.
